Sodium benzoate, an organic compound, is the sodium salt of benzoic acid. Sodium benzoate is white granule or crystalline powder, odorless or slightly benzoin odor, easily soluble in water, aqueous solution is slightly alkaline, slightly soluble in ethanol, soluble in glycerol, exposed in the air will absorb moisture. Reacting with acid will precipitate benzoic acid, reacting with carbonate will generate bubbles, and can also react with alkali and vitamin C. The industrial methods for preparing sodium benzoate include benzoic acid process.
